Bean Blondies

 
Bean Blondies Recipe
 

These bars are not too sweet and come with an extra boost of protein. They are great for cafes or health-conscious menus.

INGREDIENTS

Ready Foods Pinto Beans - #7112 (about 1 pound, pureed or pulsed slightly)
2 eggs
3/4 c brown sugar
1/4 c dry milk (or substitute for peanut flour to keep these dairy free)
3 tablespoon cornstarch
3/4 teaspoon baking powder
1/4 c vegetable oil
semisweet chocolate chips

SERVING SUGGESTION 

Stir together all ingredients, except chocolate chips. Pour into a parchment-lined pan and top with chocolate chips. Bake at 325F for about 25 minutes.
