SERVING SUGGESTIONS 

Strain the Menudo Soup to pull out the beef tripe and hominy. Reserve the broth and stir into the sour cream for a flavorful dip. Fry the quesadillas with cheese, tripe and hominy. Serve with lime wedges and jalapeños.
