To the Demi, we add a third of the weight in water, to keep plate costs down and to have enough liquid for a long braise time. Add to the pan the seared short ribs and any vegetable or herbs. We like to braise with golden beets, carrots, onion, garlic cloves and thyme. Any member of your kitchen team can easily thaw and use this Demi Glace. The pan drippings make an excellent gravy too! Just mix the liquid left in the pan with fresh Demi Glace.
