Chili Bo Ssam
Bo Ssam is a Korean dish made of roasted pork that is pulled or sliced and served with a bunch of flavorful side dishes. Each bite is wrapped in cabbage or lettuce or served with rice. This makes for a fun group meal. We created this dish using our Red Chile Sauce. It tastes like chili pepper sauce in this application.

To Serve: tofu with sesame oil, kimchi, pickled cucumbers, cabbage or bib leaves, rice, chili oil, scallions
SERVING SUGGESTIONS
We chose to dry brine the pork in salt and sugar and then roast it low and slow. When there is about 10 minutes left, pull out the pork and rub in Red Chile Sauce and return it to the oven. The Red Chile Sauce completes the crispy outside of the pork with beautiful pepper flavors.
