What is a Slopper Burger?

Move over Sloppy Joe. Behold, the Slopper Burger! It's a messy delight first created in Pueblo, Colorado, home of Colorado green chiles, some 50-ish years ago.

Every restaurant can make a good burger, but how do you stand out from the crowded burger market? Serve a Slopper!

So what exactly is a Slopper Burger? Essentially you take a burger, smother it in pork green Chile, made with Hatch or Pueblo chile peppers, cheese and all the fixings of a regular burger. We like grilled or raw onions, avocado or guacamole and sometimes chopped romaine too. It’s filling, has medium heat and is true Colorado comfort food. The bun does get totally soggy, saturated in green chile, and it’s so good!

There’s some argument about the first Pueblo restaurant that served this concoction, but to us, it doesn’t matter who came up with it, we’re just glad they did.

In the words of J. Kenji López-Alt, "As the chili hits the cheese, it melts into a gooey veil that saturates the top and bottom bun. Obviously, a fork and knife are recommended." YUM. Check out our Slopper-worthy green chile sauces here.
