So you bought a case of one of our items. (Thanks!) Now what? Here are some thawing and heating instructions to make using our ingredients a breeze in your kitchen.

Each case of a Marco’s product arrives to you in bags that are easy to open and use in your kitchen, as needed. A few of our items are always held at refrigeration temperatures and simply need to be heated and served or left cold, like a salsa.

Most of our items, however, will arrive to you frozen. Simply store the case in your freezer until you’re ready to use it. We recommend thawing bags of our frozen items in your fridge and heating to 165°F before serving, or as directed by your state health department. If the product you are using comes in a tipper tie bag, you do not need to remove the metal clip to open the bag. Simply thaw and then cut the bag open from the bottom and pour out our fully-cooked products to heat or serve.

You are able to heat our items directly in the bag in slowly simmering water in a deep pot or you can remove the thawed ingredient from the bag to heat. You will discover what is best for your kitchen flow and each application on your menu, but if you have specific questions, don’t hesitate to reach out! Our R&D team has many years of experience thawing and heating our items to perfection. Plus, we test each of our items to ensure they can hold steady on a steam table during service.

In summary:

  • Store cases in your freezer.

  • Thaw bags of product when you are ready to use the item.

  • Heat hot items to 165°F, or to the temperature specified by your local health department, before serving.

  • Items may be simmered gently directly in the bag in a deep pot of water or removed from the bag to heat before serving.
